Crock pot Roasted Chicken
This is the easiest chicken I’ve ever made.  During the Summer here in NYC, we try to avoid using the oven, period.  It emits too much heat in the apartment so I’m limited to roasting options.  I wanted to test out the crock pot and this worked like a charm!
1 Good lookin’ Bird, 3-4lbs 
1 Medium Onion
Salt, Pepper, Paprika, Garlic & Herb Mix (pick any seasonings of your choice)
Rinse your chicken, remove innards, and towel dry.  Rub chicken thoroughly with your seasonings, inside and out.  Chop onion in large pieces and place in the bottom of crock pot.  Set the chicken on top.  Cook on low for 4 hours.  
The chicken literally falls off the bone.  This made for easy lunches and great for chicken salad.
